🔪 Sharpness Test Methods

Paper Test

Hold a piece of paper (magazine weight works well) and slice through it at an angle. A sharp knife will cut cleanly with no tearing. A dull knife will struggle and tear the paper.

Tomato Test

A truly sharp knife should cut through a tomato's skin with minimal pressure. If you need to bear down or the skin resists, the knife needs sharpening. You should not have to crush the tomato.

Arm Hair Test

Lightly touch the edge to your arm hair. A shaving-sharp knife will cut hairs without you feeling the edge. This is a good indicator of field-ready sharpness.

BESS Sharpness Scale

The Brubacher Edge Sharpness Scale (BESS) measures force required to cut through a standardized material. Lower numbers = sharper:

  • 100-200 BESS: Hair-shaving sharp
  • 200-300 BESS: Paper-cutting sharp
  • 300-400 BESS: Light duty, functional
  • 400+ BESS: Needs sharpening
